Trang 2What is food irradiation?
FOOD IRRADIATION is the use of ionizing radiations
for illuminating to food in order to kill viruses bacteria,
fungi, and insects, prolongs the life of food and prevents
fruits and vegetables from ripening too fast
Several energy sources can be used to irradiate food :
-gamma rays
-electron beams (beta rays)
-X-rays
Trang 3Bactericial mechanisms
When the radiation interacts with matter, it will cause ionization
When the DNA molecules are ionized, the link between them
is fractured
If the bare irradiation is used,
pieces of DNA will not
recover again and the
cells will be destroyed,
the disease carrying
microorganism can

Trang 8As of August 1999, over 30 countries are irradiating food for
commercial purposes
Today, heath and safety authorities in over 40 countries have
approved irradiation of over 60 different foods, ranging from
spices to grains to be deboned chicken meat, do beef, to fruits
and vegetables
