TASK: ADJUST TABLE SETTINGS FOR CORRECT COVERS

EXPECTATION:

That the numbers of covers are set correctly on the tables according to the number of guest expected in the party.

2. To ensure the correct numbers of covers are placed on the tables

STEPS HOW/ STANDARDS TRAINING QUESTIONS

Check the reservation book Go to the hostess desk and check the

reservation and the number of guests for the different tables

If the settings differ from the number of guests in the party, the server should adjust it accordingly

1 Why should you check the hostess book?

2 Why should you adjust the setting according to the reservation?

Change the setting Take a service tray and cover it with

a napkin

To increase setting:

Put the required equipment on the tray and proceed to the table

Say: “Excuse let me adjust your setting for the additional guest”

Make space for the extra cover (s) and set up the equipment

To decrease the setting:

Go to the table with the service tray and take away quietly the extra setting and put it on the tray

Say: “Excuse let me adjust your setting for the additional guest”

Proceed to the station and unload the tray
