Definiton: Food safety is a scientific discipline describing handling, preparation,
and storage of food in ways that prevent foodborne illness This includes a number
of routines that should be followed to avoid potentially severe health hazards Food safety means assurance that food is acceptable for human consumption according to its intended use and Food Safety Management System means the adoption of Good Manufacturing Practices, Good Hygienic Practices, Hazard Analysis and Critical Control Point and such other practices as may be specified by regulation, for the food business (P K Jaiswal, 6)

The importance of food safety: The food safety is the extreme importance of the
people health and the only way for to prevent the incoming of the bacteria If did not follow of the guidelines of the food safety hazards, people can get sick from the eating food that was not handle properly and it can even lead to death That why food safety is very important for human health as well as all those that are eating the same food Food safety involves separation of cooked and raw food, keeping food clean cooking thoroughly, keeping the food in the safe temperatures and using safe water and raw materials Without good hygiene and sanitary
condition, germs and diseases would spread quickly
Food Safety is Yummy Land’s priority While preventing all foodborne illness is
impossible, our goal is to provide” Trust in Every Bite” by maintaining an industry leading food safety program that minimizes food safety risk for our customers wherever possible. All employees handling or preparing food in the restaurant are required to submit Green Health Certificate on the first day and update this
annually In addition, all employees must attend and pass the Food Hygiene Course
conducted by the Vietnam Administration of Food Safety and Hygiene Department which will be periodically organized by the company

Standards procedures are to be followed strictly based on the Food Safety, Station Observation Checklist( SOC), Pocket Quality Reference Guide( PQRG),
Management Development Program(MDP) and Operations and Training Manual Food safety deviations may include but not limited to:
1. Using and / or serving food items past the use through dates
2. Any practices that can negatively impact food safety Example: refusing unannounced water sampling, negligence of ensuring that the chlorinator is
in good working condition, placing ice inside the sundae mix reservoir, and other practices with negative impact on food safety
3. Restaurant Transfer in and/out of chilled and frozen products without proper authorization from QA Department and/ or Operations Consultants
4. Having 2 consecutive “F’(failed) rating from any Food Safety audits
5. Failure to accomplish and file the Food Safety Checklist
Food Safety Check- list
Food Safety Checklist is to be completed and kept on file in the restaurants
for a minimum of 60 days The purpose of the checklist is to help you in
your efforts to serve safe food, consistent with our standards, as well as local health codes This checklist must be completed at least once per day without exception If your answer “no” to any item in the checklist, the problem must be corrected immediately
Non compliance or deviation from any of the Food Safety Standards along with some other guidelines set by the Company on food safety will be
subject to disciplinary action which could range from written warning to
termination of employment Higher disciplinary action which includes
suspension or termination may apply to violations that could directly or indirectly result to loss in sales, complaints and lawsuits, and grave threats to the health of customers and some other reasons that could harm the image of the company
