Introduction

Vietnam's seafood industry is experiencing rapid recovery and growth in both value and output, necessitating the expansion of export markets to boost profits and create jobs In the first nine months of 2014, the seafood sector achieved the highest export growth rate among industries, with an estimated export value of 5.8 billion VND, reflecting a 21% increase from the previous year, according to Vasep (2014) Shrimp remains the primary product, with a diverse range of offerings including raw, semi-processed, and value-added items, which account for 30% of total shrimp products Among these, breaded shrimp has gained significant popularity, with key markets including the United States, the European Union, Japan, China, Korea, ASEAN, Australia, Brazil, and Mexico.

Aquatic food products, especially shrimp, pose significant health risks due to their perishable nature and susceptibility to microbial contamination To ensure consumer safety, it is essential to implement stringent quality control measures throughout the entire supply chain, from raw material extraction to distribution The Vietnam Association of Seafood Exporters and Producers emphasizes the need for enhanced oversight of seafood businesses to uphold quality management programs and ensure food safety, thereby protecting the reputation of Vietnamese seafood in the global market Effective quality management systems should incorporate traditional quality management techniques, as well as compliance with GMP, ISO 9000, and HACCP standards.

The HACCP system, which stands for Hazard Analysis Critical Control Point, is a highly effective scientific quality management technique This preventative approach focuses on identifying critical control points and assessing potential risks to ensure food safety.

The implementation of HACCP in Vietnam's seafood processing sector began in the 1990s to meet the demands of international markets However, by 2009, only 432 firms had received HACCP certification, a small fraction compared to the country's tens of thousands of enterprises The adoption of HACCP faces significant challenges due to outdated infrastructure and technology that do not meet current standards Additionally, business executives often have unclear perceptions of the HACCP system's role and effectiveness, highlighting the need for managers to critically assess the HACCP implementation process within Vietnamese firms.

Since its inception in 1994, Seagift Co., Ltd has expanded its offerings to include fresh frozen seafood and value-added cuisine, featuring products like shrimp, scallops, crabs, and button squid The company has focused on improving strategies and expanding export markets to boost foreign revenue Although Seagift is HACCP accredited, further growth requires enhancing the implementation of this system to better meet consumer demands and increase competitiveness through a continuous improvement strategy.

After acquiring essential insights into quality management and specialized knowledge in Industrial Management during a recent internship, the author concentrated on the topic: “Research on the application of HACCP for Torpedo breaded shrimp products at Seagift Company Limited.”

Objective

Identify limitations and propose solutions for Torpedo breaded shrimp products at Seagift Co., Ltd

Evaluate the current quality management condition based on HACCP standards

Conduct a thorough analysis of the production process and identify specific limitations Improve management efficiency, maintain the HACCP system, and enhance the quality management system

Present the analysis and proposed solutions within a specified timeframe

Research object: The process of applying the HACCP to Torpedo shrimp products of Seagift Co., Ltd

Research scope: Processing room, refining room 1, 2 at Seagift Co., Ltd

Time scope: Between September 2022 and December 2022

During my internship at Seagift Co., Ltd in the production-quality department, I gained valuable experience working alongside senior employees in Quality Management This role allowed me to easily gather information from the company's website and integrate it with internal insights, resulting in the creation of highly accurate data.

The qualitative method involves observing and monitoring the production process, conducting direct interviews with employees and experts, and consulting with workshop staff to understand the context of HACCP application This approach also aims to grasp HACCP managers' perceptions and directly implement HACCP to develop effective solutions.

Quantitative method: Using the data in Seagift’s reports for analysis There are also data from a survey of experts

CHAPTER 1 INTRODUCTION OF SEAGIFT COMPANY LIMITED

1.1 History of formation and development

Seagift Co., Ltd was established under Decision No: 251 GP/TLDN on October 18,

1999, and started to operate frozen seafood processing in April 2002

The company was founded by experienced entrepreneurs in the frozen seafood export industry, supported by a team of skilled staff and advanced machinery.

Full name: SEAGIFT COMPANY LIMITED

The company is strategically situated at the intersection of Vung Tau, West, and Central, ensuring easy access to goods and minimizing transportation costs.

The industrial park network is equipped with an efficient electricity and water system, complemented by generators and water pumps for optimal functionality The company is strategically surrounded by greenery, enhancing air quality and providing a sense of separation from the external environment An outdoor dining area offers a clean and airy space for employees during production Additionally, a well-designed drainage system ensures that the company remains flood-free during rainy weather.

The processing workplace is designed for cleanliness, featuring an easy-to-clean workshop floor with drainage ditches and walls lined with ceramic tiles The nearly closed metal frames of the doors facilitate easier cleaning, while the walls separating different stages include apertures for transporting completed products, equipped with plastic screens to prevent contamination.

Seagift Company Limited, a proud member of the Vietnam Association of Seafood Exporters and Producers (VASEP), is committed to quality and safety in its operations The company has achieved ISO 9001:2015 certification for its quality management system and has been recognized for its HACCP food hygiene and safety standards by the DNV international appraisal agency from the Netherlands Additionally, Seagift adheres to BRC and Halal standards, ensuring the highest level of compliance in the seafood industry.

The company has received a quality and safety certificate from NAFIQAD for the bio-industry, along with export code DL317 for the Korean and European (EU) markets.

Hai An Co., Ltd specializes in processing and trading seafood and various food products, alongside machinery and equipment repair The company is also involved in aquaculture, real estate, cold storage rental, and consignment goods.

The company exports the majority of its products to key markets including Singapore, Korea, Malaysia, Hong Kong, Japan, the United States, Australia, and several European nations, which collectively represent approximately 90% of its total annual output.

Hai An Co., Ltd is dedicated to delivering high-quality, nutritionally valuable products while ensuring food safety through adherence to BRC global quality standards and HACCP The company also complies with ISO 9001 and relevant legislative requirements for its quality management system.

1.3 The organizational structure of the company

The Board of Directors oversees and manages the company's production and business activities, holding the authority to make decisions on all aspects of daily operations.

The Deputy Director supports the Director in managing various work stages as authorized, providing valuable suggestions to enhance the Director's management capabilities Additionally, the Deputy Director acts as a substitute for the Director, making decisions on general tasks during times of busyness or when the Director is unavailable.

Financial accountants are responsible for recording, calculating, and verifying production performance, as well as managing financial revenue and expenditure plans They ensure the proper collection and payment processes, monitor the preservation and utilization of assets, supplies, and capital, and work to identify and prevent waste and violations of company regulations.
