Internship is to get practical knowledge of the hospitality industry and toapply learned skills to contribute to the industry Apart from that, getting preparedfor a working life and also exposure to the work culture was my main goal in takingthis internship program Students are given a chance to have hands-on experiencewhereby students are given the opportunity for an internship exposure and write areport about their experience and findings in the reality of the workplace Despitethis pandemic moment, I was fortunate enough to be accepted at Sunset BeachResort & Spa Phu Quoc

The internship report gives out general information of my internship activitiesfor a span of 7 weeks, from February 7th to March 25th

Firstly, this report will give an overview of the organization Next, a fulldescription of tasks carried out in the Food and Beverage Departments and dutiesexplored along with challenges and experience that I gained form the internship.Finally, some suggestions for the internship company and Faculty of ForeignLanguages at AGU are stated

PART A DESCRIPTION OF INTERNSHIP COMPANY

I Overview

Sunset Beach Resort & Spa is a four-star resort located at 100C/2 Tran HungDao street, Duong Dong, Phu Quoc, Kien Giang Situated right next to the beachand in the center of the bustling Duong Dong Town, it is really convenient forcustomers to discover many nearby attractions such as Phu Quoc Night Market,Duong Dong Market, Phu Quoc Waterfall, Sao Beach, Phu Quoc Prison, etc

Although the resort was first opened in 2019, locals and tourists are all familiarwith the name of Sunset Beach Bar & Restaurant Since its opening in 2016, SunsetBeach Bar has always been an ideal destination for both domestic and foreign touristswhen they would like to enjoy a high-quality drink, some delicious food, or to dive in adynamic music night under a glamorous Phu Quoc sunset skyline on the beach

Sunset Beach Bar & Restaurant has kept its place as one of the top 5 bars and top 10restaurants in Phu Quoc Island since 2016.

Sunset Beach Resort & Spa has 3 blocks namely A, B, C with 117internationally standardized rooms, all of which are modernly and convenientlydesigned to provide guests with the best experiences All of the rooms are spaciousand filled with equipment that can meet customer expectation for a top-rated resort,including cable TVs, air conditioners, free high-speed Wifi, safes, bathtubs, etc.Whether it is a family or a couple on a honeymoon retreat, Sunset Beach Resort &Spa Phu Quoc features six modern and tastefully designed rooms to accommodateall travelers

III Dining

1 Soleil Fusion Restaurant – All day dining

At first, the restaurant was called “Sunset Beach Restaurant” Then, in order toconvey the characteristics of the restaurant, the General Manager of the resort changedits name to “Soleil Fusion Restaurant” which means the combination of Asian andEuropean cuisine Furthermore, as a French word “Soleil” means "sun", the restaurant isexpected to have a bright future and become more and more developed

This is the only restaurant in the resort which is on the first floor of block B

At Soleil Fusion Restaurant, the resort prides itself on its culinary heritage ofexcellence and innovation With breakfast buffets, inspiring lunches and dinnerswith an international a la carte menu, combo menu, set menu and drink menu,customers can look forward to an exciting culinary journey The menu featuresfresh, healthy Vietnamese, Asian delights, as well as European signature dishes

The restaurant can accommodate up to 100 people with both inside andoutside areas Moreover, from 3pm every day, the restaurant also operates a lawnarea located between the infinite pool and the beach, to give customers theexperience of enjoying their meals while watching the sunset

 Set menu is only served on special occasions like Lunar New Year for target customers

PART B INTERNSHIP ACTIVITIES

After acquiring the basic knowledge of the hospitality industry while taking the

"Restaurant Profession" class last semester, I was quite interested in this industrybecause it is one of the most developed industries today Furthermore, an internship

in this industry would help me learn a lot of useful knowledge, necessary skills, aswell as challenge myself with things I had never done before so that I could get thebest preparation for my job in the future At Sunset Beach Resort & Spa, 4 of myclassmates and I were assigned to work in Food and Beverage Department (F&B).This part includes internship activities, pros and cons and experiences that I havegained during the internship

I JOB DESCRIPTION

In the 2-month internship period, I had to rotate through different positions such

as hostess, cashier, bartender and waitress, performed various activities whichinvolved a lot of multitasking owing to the lack of official staff in the restaurant.There were only 5 people including an outlet manager, 2 captains, a waiter and awaitress On the first day, we were given information about the department by acaptain of the restaurant Then, he gave us a quick guide on how to serve thebreakfast buffet and we started to work from that very first moment

We worked on 8 hours shift schedule for 6 days a week and our off days werearranged randomly Two main working shifts are M6 (morning shift from 6:00 am to2:00 pm) and A2 (afternoon shift from 2:00 pm to 10:00 pm) Sometimes we alsotook M7 and A3 if there was a gala dinner, birthday party, or other events Theworking schedule was arranged monthly, but it was usually amended by the outletmanager for some reasons
