Quy trình sản xuất bia Heineken

Đại mạch

Malt

Đại mạch được chia ra làm 2 nhóm : mùa đông

và mùa xuân, có chu kỳ sinh trưởng 100-120

ngày

Trong đó :

+ Đại mạch 2 hàng : dùng trong sản xuất bia

+ Đại mạch 4 hàng : một số chưng được dùng

trong sản xuất bia

+ Đại mạch 6 hàng : đa số được dùng trong sản

xuất thức ăn gia súc

+ Đường khử : 4% + Protid : 10%

+ Pentoza: 6%

+ Cellulose : 8%

Houblon

+Tạo ra mùi vị đặc trưng của bia

+Như một chất bảo quản bia, làm tăng tính ổn

định, khả năng tạo bọt, tính giữ bọt, làm cho bột

0,5 Hàm lượng α0,5 acid có trong hoa ở dạng cao là 30%, ở dạng viên là 8-10%

- Trên thị trường hiện nay có 3 loại phổ biến:

+ Dạng hoa cánh khô+ Dạng viên

+ Dạng cao trích ly

- Thành phần của nước ảnh hưởng

trực tiếp đến chất lượng của bia

+ Khi dưa vào sản xuất tỉ lệ men chết dưới 2%,

tỉ lệ nảy chồi lớn hơn 10%

+ Nấm men đưa vào dịch đường để lên men phải được từ 10-20 triệu tế bào/ml dịch giống + Nấm men phải có khả năng chuyển hóa các đường đôi, đường đơn giản, các peptid, acid amin, giải phóng ra CO2, rược etylic và nhiệt

+ Nấm men phải thuần chủng
